Instructions

To Make the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13-inch baking pan, or line muffin tins for cupcakes.

  2. In a large mixing bowl, whisk together the dry strawberry cake mix and strawberry gelatin powder.

  3. Add the eggs, vegetable oil, milk, mashed strawberries, and vanilla extract. Using an electric mixer on medium speed, beat for about 2 minutes, until the batter is smooth and well-combined.

  4. Pour the batter into your prepared pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  5. Allow the cake to cool completely in the pan set on a wire rack before applying the glaze.

To Make the Glaze:

  1. In a medium bowl, combine the sifted powdered sugar, 2 tablespoons of strawberry puree, and the vanilla extract. Whisk until the glaze is completely smooth. If it seems too thick, add more puree, one teaspoon at a time, until it reaches a pourable consistency.

  2. Drizzle the glaze generously over the completely cooled cake. For a final touch, garnish with fresh strawberry slices if desired. Allow the glaze to set for 10-15 minutes before slicing and serving.
