Peanut Butter Balls Recipe

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening

Method

 

  1. In a large bowl, mix the peanut butter, softened butter, and vanilla extract until smooth.
  2. Gradually add the powdered sugar, mixing until a thick dough forms.
  3. Scoop the mixture and roll into 1-inch balls using your hands.
  4. Place the balls on a parchment-lined baking sheet.
  5. Refrigerate for 30 minutes or freeze for 15 minutes until firm.
  6. Melt the chocolate chips and coconut oil together until smooth using a microwave or double boiler.
  7. Dip each peanut butter ball into the melted chocolate using a fork, letting excess drip off.
  8. Return coated balls to the baking sheet and add toppings if desired.
  9. Refrigerate for about 20 minutes until the chocolate is fully set.

Notes

Chill the peanut butter balls well before dipping to keep their shape. Coconut oil helps create a glossy chocolate coating, but shortening works too. Store chilled for best texture and firmness.
