Place the cubed croissants in the prepared baking dish, spreading them into a uniform layer. Set aside.
3. Make the Spiced Apple Filling:

In a large skillet over medium-low heat, melt the butter. Add the brown sugar, cinnamon, and nutmeg. Whisk until the sugar has dissolved and the mixture is smooth.

In a small bowl, create a slurry by stirring the cornstarch and water together until smooth. Pour the slurry into the apple mixture and stir continuously for 1-2 minutes until the sauce thickens.

Remove the skillet from the heat and stir in the lemon juice. Spoon the entire apple mixture evenly over the layer of croissants.
4. Create the Custard:
In a medium bowl, vigorously whisk together the ½ cup heavy cream, applesauce, eggs, 1 ½ teaspoons vanilla, and ½ teaspoon cinnamon until smooth and fully combined.
5. Assemble and Bake:
Slowly and evenly pour the custard mixture over the apples and croissants, ensuring everything is moistened. Gently press down any dry croissant pieces with a spatula.
Bake for 35-40 minutes, or until the top is golden brown and the center is set.

While the casserole bakes, prepare the icing: In a small bowl, whisk the powdered sugar, 2 tablespoons heavy cream, and ½ teaspoon vanilla until a smooth, drizzle-able consistency forms. Add more cream, a teaspoon at a time, if the icing is too thick.
